First of all let’s start off with saying that this recipe was completely inspired by Josie from Fashion Mumblr. She recently mentioned her ‘Beauty Balls’ in a vlog and wrote a blogpost about them. Since I’m allergic to tree nuts and lactose intolerant I decided to make my own version of these healthy snacks.
The basis of these energy balls are just three ingredients:
- 10 Medjoul Dates
- 2 tbs Coconut oil
- 2 ts Cocoa Powder
After you’ve mixed this all together in your blender you can add basically everything you fancy. This time I made these energy balls with raisins and different kind of seeds:
- 3/4 cup Raisins
- 1/3 cup of Pumpkin seeds, Sunflower seeds and Pine nuts
Blend these ingredients together with the mixture you’ve already created. After that you want to take a small part of the mixture and use your hands to roll small balls. Place them on a baking tin, lined with baking paper and put them in the fridge for at least 2 hours. After that you can eat them right away with a cup of coffee or take them with you for on the go.
I’m thinking about mixing up the ingredients next time and make these energy balls with cranberries, pumpkin seeds, sunflower seeds and pine nuts. If you’re using these energy balls as a snack before or after a workout you could also add some of your protein powder to the recipe. By adding some protein powder to the mixture you might want to add some more coconut oil. Finally to make it more of a treat you could add some dark chocolate pieces to the mixture.
